Aka Kasha, probably originating from China, Buckwheat is not actually a grain, but part of the same family as rhubarb! Milled from whole raw buckwheat, the strong nutty flavour is delicious in most recipes using flour. It contains micronutrients that support good health, including B vitamins, iron and zinc, and also the phytonutrient rutin. Buckwheat has more protein than rice, wheat, millet or corn and is high in the essential amino acids lysine and arginine.
