Chickpeas (Garbanzos/Gram), much used in Indian and Middle Eastern dishes. When ground becomes very versatile flour. Soak 8-12 hrs and cook for 3 hrs. Or pressure-cook 40 mins. Suitable for sprouting. For Houmous - blend cooked chickpeas with garlic, oil, lemon juice, paprika, and salt and sesame seeds.
