The wine used to make this red wine vinegar is made from organic grapes grown in sunny, Austrian vineyards by vintners who have been producing organic wines of consistently high-quality for years. The grapes are harvested by hand, which is a labour intensive method when compared to mechanical harvesting, but one that is much kinder to both the vine and its fruit. The grapes are used to produce table wines of outstanding quality, which then re-fermented to produce this vinegar.
