Similar to Cornmeal, Polenta has a fine,granular texture; more like semolina than normal flour.Use as you would pasta, (Polenta is an Italian word-where it is commonly eaten).Serve hot with any sauce.Cook 1 cup Polenta: 5 cups water+salt or stock. Simmer, often stirring, for 45 minutes.

Recipes:

Idiot-proof Polenta You’ll need (to serve 4-6):- 300g (10oz) Polenta 1.8l (3pts) Water/(Soya?)Milk mix (or plain water) Butter (or margarine) Parmesan Cheese Seasoning (This will work fine if you adjust the ingredients pro rata) What to do:- Bring the (salted) water/milk to the boil in a large saucepan, and reduce to a gentle simmer. Slowly drizzle in the polenta grains while stirring constantly in the same direction- get an adult to help you at this stage if your hand/eye co-ordination is a bit awry. When all is incorporated, continue simmering gently for 20 minutes, stirring very frequently. The minute you go to answer the ‘phone, it will stick to the bottom of the pan and burn. After 20 mins., you’re pretty much done- there will almost certainly be the odd lump, but it doesn’t really matter. While still on a very low heat, add a generous amount of butter/marg and grated Parmesan cheese (please don’t use the ready-grated stuff- it’s ‘orrible) (or vegan equivalent), adjust seasoning, and stir in well- the mixture should now go dead smooth and glossy. While still hot, pour the mix into a buttered shallow dish- lasagne dishes work just fine- the mix will pretty much self-level. When it’s cool (20-30 mins.) you will be able to cut it into usable portions with a sharp knife- I prefer triangles, but who am I to say? To reheat and serve, bring a grill or griddle pan (or frying pan at a push) to max. heat. Brush your bits of polenta with (olive) oil, and blast them until they start to go golden brown and crispy on the outside- this will take a little while, and they’re now almost impossible to burn (‘though I wouldn’t recommend going to the pictures or anything). Particularly good with Mediterranean Roast Veg. Any unused pieces will keep fine covered in the ‘fridge for 4-5 days. Good luck.
