A prune is any of various plum species, mostly Prunus domesticus or European Plum (commonly referred to as a Sugar Plum). They are usually sold as dried fruit. Fresh plums that are marketed as "prunes" have an oval shape and a more easily removed pit. The dried fruit is wrinkly in texture, and chewy on the inside. Prunes are used in cooking both sweet and savory dishes. Stewed prunes, a compote, are a dessert. Prunes are a frequent ingredient in North African tagines. Perhaps the best-known gastronomic prunes are those of Agen (pruneaux d'Agen). Prunes are used frequently in Tzimmes, a traditional Jewish dish in which the principal ingredient is diced or sliced carrots; and in the traditional Norwegian desserts fruktsuppe and sviskekompott. Prune juice is made by softening prunes through steaming and then putting them through a pulper to create a watery puree. Prunes and their "juice" contain the natural laxative dihydrophenylisatin (related to isatin). Faster results are obtained by heating the prune juice. Prunes also contain dietary fibre (about 6%, or 0.06g per gram of prune). Prunes and prune juice are thus common home remedies for constipation. Prunes also have a high antioxidant content. In China, the popular summer drink suanmeitang, made with sour prunes, is sometimes thought to have positive effects on acidity in the body. It is also known to taste like BBQ sauce.

Psyllium seed husks, also known as ispaghula, isabgol, or simply as psyllium, are portions of the seeds of the plant Plantago ovata, (genus Plantago), a native of India and Pakistan. They are soluble in water, expanding and becoming mucilaginous when wet. Psyllium seed husks are indigestible in human beings and are often used as a source of dietary fibre. They are used to relieve constipation, irritable bowel syndrome, diverticular disease, and diarrhea. They are also used as a regular dietary supplement to improve and maintain regular GI transit. The inert bulk of the husks helps provide a constant volume of solid material irrespective of other aspects of the diet or any disease condition of the gut. Some recent research is also showing them to be promising in lowering cholesterol and controlling diabetes. The husks are used whole in their natural state, or dried and chopped or powdered for easier consumption. In either of these forms, one takes them by mixing them with water or another fluid. Sometimes they are combined with clay as a detoxification drink. They are also available in capsules. They may be combined with other ingredients (e.g., Blackstrap molasses is sometimes used with psyllium seed husks for its high mineral and vitamin content, as well as being an excellent carrier). A typical dose is one to three teaspoons per glass of water.

The seeds (and seed oil, see below) of pumpkins, such as Cucurbita pepo varieties have been subject to a great deal of research, especially into the treatment of prostate ailments, and have been shown to be especially rich in steroidal compounds, in addition to their nutritional value. One gram of pumpkin seed protein contains as much L-tryptophan as a full glass of milk, making it of interest to researchers studying the treatment of anxiety disorders. Some people eat the seeds as preventative measure against onset of anxiety attacks, clinical depression and other mood disorders. Some studies have also found pumpkin seeds to prevent arteriosclerosis (hardening of the arteries) and to regulate cholesterol levels in the body. The oil of pumpkin seeds, a culinary speciality in (and important export commodity of) Central European cuisine as a salad oil and (although this destroys its essential fatty acids) a cooking oil, is also used to treat irritable bowel syndrome and various other ailments, both in folk medicine and in modern medical practice and research.

Quinoa, a species of goosefoot (Chenopodium), is a grain-like crop grown primarily for its edible seeds. It is a pseudocereal rather than a true cereal, or grain, as it is not a grass. As a chenopod, quinoa is closely related to species such as beets, spinach and tumbleweeds. Its leaves are also eaten as a leaf vegetable, much like amaranth, but the commercial availability of quinoa greens is currently limited. Quinoa was of great nutritional importance in pre-Columbian Andean civilisations, being secondary only to the potato, and was followed in importance by maize. In contemporary times, this crop has become highly appreciated for its nutritional value, as its protein content is very high (12%-18%), making it a healthy choice for vegetarians and vegans. Unlike wheat or rice (which are low in lysine), quinoa contains a balanced set of essential amino acids for humans, making it an unusually complete protein source. It is a good source of dietary fibre and phosphorus and is high in magnesium and iron. Quinoa is gluten-free and considered easy to digest. Because of all these characteristics, quinoa is being considered a possible crop in NASA's Controlled Ecological Life Support System for long-duration manned spaceflights. Quinoa has a light, fluffy texture when cooked, and its mild, slightly nutty flavour makes it an alternative to white rice or couscous. The first step in preparing quinoa is to remove the saponins, a process that requires soaking the grain in water for a few hours, then changing the water and resoaking, or rinsing it in ample running water either in a fine strainer or in cheesecloth. Removal of the saponin helps with digestion; the soapy nature of the compound makes it act as a laxative. A common cooking method is to treat quinoa much like rice, bringing two cups of water to a boil with one cup of grain, covering at a low simmer and cooking for 14-18 minutes or until the germ separates from the seed. The cooked germ looks like a tiny curl and should have a slight bite to it (like al dente pasta).

Raisins are dried grapes. They are produced in many regions of the world, such as the United States, Australia, Chile, Argentina, Macedonia, Mexico, Greece, Turkey, India, Iran, Pakistan, China, Afghanistan, Togo, and Jamaica, as well as South Africa and Southern and Eastern Europe. Raisins may be eaten raw or used in cooking and baking. The word raisin dates back to Middle English and is a loanword from Old French; in Old French and French, raisin means "grape," while, in French, a dried grape is referred to as a raisin sec, or "dry grape." The Old French word in turn developed from the Latin word racemus, "a bunch of grapes." In the United Kingdom, Ireland, Australia and New Zealand, the word raisin is reserved for the dried large dark grape, with sultana being a dried large white grape, and currant being a dried small Black Corinth grape. Raisins are about 60% sugars by weight, most of which is fructose. Raisins are also high in certain antioxidants, and are comparable to prunes and apricots in this regard. As with all dried fruits, raisins have a very low vitamin C content. The natural sugar in grapes crystallises during the drying process. Raisins are sweet due to their high concentration of sugars. If they are stored for a long period, the sugar inside the fruit crystallises. This makes the dry raisins gritty, but does not affect their usability. The sugar grains dissolve when the raisins are swelled in (hot) water.

Rice is the seed of the monocot plant Oryza sativa, of the grass family (Poaceae). As a cereal grain, it is the most important staple food for a large part of the world's human population, especially in tropical Latin America, the West Indies, East, South and Southeast Asia. It is the grain with the second highest worldwide production, after maize ("corn"). Since a large portion of maize crops are grown for purposes other than human consumption, rice is probably the most important grain with regards to human nutrition and caloric intake, providing more than one fifth of the calories consumed worldwide by the human species. A traditional food plant in Africa, rice has the potential to improve nutrition, boost food security, foster rural development and support sustainable landcare. In early 2008, some governments and retailers began rationing supplies of the grain due to fears of a global rice shortage. The name wild rice is usually used for species of the grass genus Zizania, both wild and domesticated, although the term may also be used for primitive or uncultivated varieties of Oryza. There are many varieties of rice; for many purposes the main distinction is between long-and medium-grain rice. The grains of long-grain rice (high amylose) tend to remain intact after cooking; medium-grain rice (high amylopectin) becomes more sticky. Medium-grain rice is used for sweet dishes, and for risotto and many Spanish dishes. Rice is cooked by boiling or steaming, and absorbs water during cooking. It can be cooked in just as much water as it absorbs (the absorption method), or in a large quantity of water which is drained before serving (the rapid-boil method). Electric rice cookers, popular in Asia and Latin America, simplify the process of cooking rice. Rice is often heated in oil before boiling, or oil is added to the water; this is thought to make the cooked rice less sticky.
