PREPACKED COMMODITIES

The peanut, or groundnut (Arachis hypogaea), is a species in the legume family (Fabaceae) native to South America, Mexico and Central America. It is an annual herbaceous plant growing to 30-50cm tall. The leaves are opposite, pinnate with four leaflets (two opposite pairs; no terminal leaflet), each leaflet 1-7cm long and 1-3cm broad. The flowers are a typical peaflower in shape, 2-4cm across, yellow with reddish veining. After pollination, the fruit develops into a legume 3-7cm long, containing 1-4 seeds, which forces its way underground to mature. Peanuts are a rich source of protein (roughly 30 grams per cup after roasting). Prior to 1990 the PER method of protein evaluation considered peanut protein along with soy protein an incomplete protein, containing relatively low amounts of the essential amino acids cysteine and methionine (but high in lysine), and it was advised to be sure that a diet or meal with peanuts as a staple also include complementary foods such as whole grains like corn and wheat, which are adequate in methionine but limited by lysine. Protein combining has been largely discredited. Since 1990 the gold standard for measuring protein quality is the Protein Digestibility Corrected Amino Acid Score (PDCAAS) and by this criterion peanut protein and other legume proteins such as soy protein is the nutritional equivalent of meat and eggs for human growth and health. Peanut oil is a mainly monounsaturated fat (50%), much of which (97%) is oleic acid. Saturated fatty acids compose 13% of peanut fat, where palmitic acid is the most present (74%) followed by stearic acid (16%). Some say peanuts are an unbalanced source of fat because they have only trace amounts of required Omega-3 fats. Some brands of peanut butter are fortified with Omega-3 in the form of linseed oil to balance the ratio of Omega-3 to Omega-6. Peanuts are a good source of niacin and thus contribute to brain health, brain circulation and blood flow.

The pear is an edible pomaceous fruit produced by a tree of genus Pyrus. The pear is classified within Maloideae, a subfamily within Rosaceae. The apple (Malus ×domestica), which it resembles in floral structure, is also a member of this subfamily. The English word pear is probably from Common West Germanic pera, probably a loanword of Vulgar Latin pira, the plural of pirum, akin to Greek api(r)os, which is likely of Semitic origin. The place name Perry can indicate the historical presence of pear trees. The term "pyriform" is sometimes used to describe something which is "pear-shaped". Pears are rich in Vitamin A, Vitamin C, E1, copper and potassium. Pears are the least allergenic of all fruits. Because of this, it is sometimes used as the first juice introduced to infants. Pears can be useful in treating inflamation of mucous membranes, colitis, chronic gallbladder disorders, arthritis, and gout. Pears can also be beneficial in lowering high blood pressure, controlling blood cholesterol levels, and increasing urine acidity. Most of the fibre in Pears is insoluble, making pears a good laxative. The gritty fibre content may cut down on the number of cancerous colon polyps. Most of the vitamin C, as well as the dietary fibre, are contained within the skin of the fruit.

The Pecan (Carya illinoinensis or illinoensis) is a species of hickory, native to south to central North America, in Mexico from Coahuila south to Jalisco and Veracruz,in the United States from southern Iowa, Illinois and Indiana east to western Kentucky, North Carolina, South Carolina and western Tennessee, south toGeorgia, Alabama, Mississippi, Louisiana, Texas, Oklahoma and Arkansas. "Pecan" is from an Algonquian word, meaning a nut requiring a stone to crack. Pecans are a good source of protein and unsaturated fats. A diet rich in nuts can lower the risk of gallstones in women. The antioxidants and plant sterols found in pecans reduce high cholesterol by reducing the "bad" LDL cholesterol levels.

Pine nuts are the edible seeds of pines (family Pinaceae, genus Pinus). About 20 species of pine produce seeds large enough to be worth harvesting; in other pines the seeds are also edible, but are too small to be of value as a human food. Pine nuts contain, depending on species, between 10-34% protein, with Stone Pine having the highest content. They are also a source of dietary fibre. When first extracted from the pine cone, they are covered with a hard shell (seed coat), thin in some species, thick in others. The nutrition is stored in the large female gametophytic tissue that supports the developing embryo (sporophyte) in the centre. Although a nut in the culinary sense, in the botanical sense pine nuts are seeds; being a gymnosperm, they lack a carpel (fruit) outside. Pine nuts have been eaten in Europe and Asia since the Paleolithic period. In Italian they are called pinoli or pignoli and are an essential component of Italian pesto sauce. Pine nuts are also used in chocolates and desserts such as baklava. It is also a widely used ingredient in Middle Eastern cuisine, reflected in a diverse range of dishes such as kibbeh, sambusek, ladies' fingers and many others. Throughout Europe and Middle East the pine nuts used are from Pinus pinea (Stone Pine). They are easily distinguished from the Asian pine nuts by their more slender shape and more homogeneous flesh. Pine nuts contain thiamine, vitamin B1 and protein.

Pineapple (Ananas comosus) is the common name for an edible tropical plant and also its fruit. It is native to the southern part of Brazil, and Paraguay. This herbaceous perennial plant grows to 1.0-1.5m tall with 30 or more trough-shaped and pointed leaves 30-100cm long, surrounding a thick stem. The pineapple is an example of a multiple fruit: multiple, helically-arranged flowers along the axis each produce a fleshy fruit that becomes pressed against the fruits of adjacent flowers, forming what appears to be a single fleshy fruit. Pineapple is eaten fresh or canned and is available as a juice or in juice combinations. It is used in desserts, salads, as a complement to meat dishes and in fruit cocktail. While sweet, it is known for its high acid content (perhaps malic and/or citric). Pineapples are the only bromeliad fruit in widespread cultivation. It is one of the most commercially important plants which carry out CAM photosynthesis. Pineapple contains a proteolytic enzyme bromelain, which breaks down protein. Pineapple juice can thus be used as a marinade and tenderiser. These enzymes can be hazardous to someone suffering from certain protein deficiencies or disorders, such as Ehlers-Danlos syndrome. Raw pineapples also should not be consumed by those with Hemophilia or by those with kidney or liver disease, as it may reduce the time taken to coagulate a consumer's blood. Consumers of pineapple have claimed that pineapple has benefits for some intestinal disorders; others claim that it helps to induce childbirth when a baby is overdue. Pineapple is a good source of manganese (91% rda in a 1 cup serving), as well as containing significant amounts of Vitamin C (94% rda in a 1 cup serving) and Vitamin B1 (8% rda in a 1 cup serving).

The pinto bean (Spanish: frijol pinto, literally "painted bean") is named after its mottled skin (c.f. the pinto horse), hence it is a type of mottled bean. It is the most common bean in the United States and northwestern Mexico, and is most often eaten whole in broth or mashed and refried. Either whole or mashed, it is a common filling for burritos. The young pods may also be used as green beans. This is the bean most commonly used for refried beans (fresh or canned) and in many dishes at Tex-Mex restaurants. Rice and pinto beans served with cornbread or corn tortillas are often a staple meal where there is limited money for meat; the amino acids in this combination make it a complete protein source. n the southeastern part of the United States, pinto beans were once a staple of the poor (usually eaten with cornbread, milk, and cabbage), especially during the winter months. Some churches in rural areas still sponsor "pinto bean suppers" for social gatherings and fund raisers.

The pistachio (Pistacia vera L., Anacardiaceae or sometimes Pistaciaceae) is a small tree native to mountainous regions of Iran, Turkmenistan, Turkey and western Afghanistan, that produces an important culinary nut. Pistacia vera often is confused with other species in the genus Pistacia that are also known as pistachio. These species can be distinguished from P. vera by their geographic distributions (in the wild) and their nuts. Their nuts are much smaller, have a strong flavour of turpentine, and have a shell that is not hard. The word pistachio is a loanword from Persian via Latin, and is a cognate to the Modern Persian word "Peste". The kernels are often eaten whole, either fresh or roasted and salted, and are also used in ice cream and confections such as baklava and cold cuts such as mortadella. Inhabitants of the American Midwest make pistachio salad, which includes fresh pistachios or pistachio pudding, cool whip, canned fruit and sometimes cottage cheese or marshmallows. In July 2003, the Food and Drug Administration (FDA) approved the first qualified health claim specific to nuts lowering the risk of heart disease: "Scientific evidence suggests but does not prove that eating 1.5 ounces (42.5g) per day of most nuts, such as pistachios, as part of a diet low in saturated fat and cholesterol may reduce the risk of heart disease". In research at Pennsylvania State University, pistachios in particular significantly reduced levels of low-density lipoprotein (LDL cholesterol) while increasing antioxidant levels in the serum of volunteers.

Popcorn or popping corn is a type of corn, which explodes from the kernel and puffs up when heated. Corn popping was originally discovered by Native Americans, but became popular as a snack food during the United States Great Depression, especially in movie theatres. Corn is able to pop because, unlike other grains, its kernels have a hard moisture-sealed hull and a dense starchy filling. This allows pressure to build inside the kernel until an explosive "pop" results. Some strains of corn are now cultivated specifically as popping corns. There are many techniques for popping corn. Commercial large-scale popping machines were invented by Charles Creators in the late 19th Century. Many types of small-scale home methods for popping corn also exist, with the most popular being prepackaged microwavable popcorn. As a snack food, popcorn has both advocates and detractors. Some consider it to be a health food, while others caution against it for a variety of reasons. Popcorn can also have non-food applications, ranging from holiday decorations to packaging materials.

A prune is any of various plum species, mostly Prunus domesticus or European Plum (commonly referred to as a Sugar Plum). They are usually sold as dried fruit. Fresh plums that are marketed as "prunes" have an oval shape and a more easily removed pit. The dried fruit is wrinkly in texture, and chewy on the inside. Prunes are used in cooking both sweet and savory dishes. Stewed prunes, a compote, are a dessert. Prunes are a frequent ingredient in North African tagines. Perhaps the best-known gastronomic prunes are those of Agen (pruneaux d'Agen). Prunes are used frequently in Tzimmes, a traditional Jewish dish in which the principal ingredient is diced or sliced carrots; and in the traditional Norwegian desserts fruktsuppe and sviskekompott. Prune juice is made by softening prunes through steaming and then putting them through a pulper to create a watery puree. Prunes and their "juice" contain the natural laxative dihydrophenylisatin (related to isatin). Faster results are obtained by heating the prune juice. Prunes also contain dietary fibre (about 6%, or 0.06g per gram of prune). Prunes and prune juice are thus common home remedies for constipation. Prunes also have a high antioxidant content. In China, the popular summer drink suanmeitang, made with sour prunes, is sometimes thought to have positive effects on acidity in the body. It is also known to taste like BBQ sauce.
